Vegan Nutty Caramel Bars

These are a GO-TO when I’m in a sweets mood—which, when am I not in a sweets mood?!?! They have protein in them which makes me feel better about snacking on them lol. I like these best a little chilled, so I keep them in the fridge!

Duration: 30 mins.

//ingredients//

-2 Servings Protien Powder *

-1 & 2/3 Cup of Oats

-1/4 Cup Coconut Flour

-2 Tbs. of Peanut Butter

-1/2 Cup of Cashews

-6 Dates

-2 Tbs. Buckwheat

-1 Cup of Water

-1 Tsp. Salt

-1 Tbs. Melted Coconut Oil

-1 Bag of Vegan Chocolate

*I used the Salted Caramel Protein from Tropeaka

//method//

1) Blend together protein powder, 1 cup of the oats, flour, peanut butter, cashews, dates, buckwheat, water, salt. Blend until it is smooth but still has some texture to it.

2) Scoop mixture into a bowl and mix in the rest of the oats and coconut oil with a spoon or hands.

3) Spread on a pan to make the bars about 1/2 inch in height and place in the freezer to set.

4) Melt the chocolate. Pull out the pan and pour the chocolate over the mixture. Let set in the freezer.

5) Take out and let sit for 5 mins before cutting and serving. Store in the freezer
