Vegan Cheesy Alfredo

This recipe is a prime example that you don’t have to give up your favorites to go plant-based. Pasta is one of my favorite foods, so finding a great way to make it taste super cheesy is perfect for a night of comfort food, or if you need a dish you can multiply for a crowd.

//ingredients//

3 Tbsp Vegan Butter or Coconut Oil

1.5 Tbsp Crushed Garlic

2 Tbsp All Purpose Flour or Corn Starch for GF

1 Can Coconut Milk or 14 oz of Oat Milk

1/3 cup  Vegetable Broth

1.5 tsp Dijon Mustard

1/3 cup Nutritional Yeast

1/3 cup Chopped Red Onion

1/3 cup Chopped Spinach

Salt (to taste)

Black Pepper (to taste)

//method//

  1. Cook your favorite pasta as you normally would. Set aside and toss in a small amount of olive oil to prevent sticking.

  2. In a small bowl or saucepan, melt the butter/oil and add garlic.

  3. Add in flour or corn starch and let the butter soak it up and sizzle for a minute, making sure the heat is not too high to burn it.

  4. Then whisk in milk, broth, onions, and nutritional yeast. Make sure the sauce becomes smooth.

  5. Bring the sauce to a boil and continue periodically as not to burn it. As the sauce thickens, begin to remove it from the heat. It will continue to thicken as it cools.

  6. When it has thickened up, whisk in the pepper, mustard, & salt. 

  7. On low heat or simmer, add in pasta & spinach, and warm for serving.
