Even though I prefer the warm weather, I do love fall seasonal flavors. Since red pairs are in season and I basically drink chai everyday, I thought these flavors would really compliment each other. This loaf is great for a little night-time treat, but also serves as a warm coffee cake in the morning—and you can easily mix all the ingredients in one bowl!

Duration: 1 Hour & 15 minutes

//ingredients//

4 Chai tea bags

2 Pears (I used red pears)

3/4 Cup Dairy Free milk (I used oat)

1/3 Coconut Oil

2 Cups of Flour

1 Tbsp Baking Powder

1 Tsp. of Salt

1/2 cup Coconut Sugar

2 Tbsp. Maple syrup

1/2 Tsp. Cinnamon

2 Tsp. ACV (Apple Cider Vinegar)

//method//

1) Make your chai concentrate by boiling 1/2 cup of water and placing the tea bags in the water to steep for 10 minutes.

2) Preheat oven to 350.

3) Peel & slice pears into fourths. Set one fourth to the side. Mash the rest until it’s the same constancy as apple sauce.

4) In a mixing bowl, combine: DF milk, pear sauce, melted coconut oil, and chai concentrate.

5) Add in flour, baking powder, salt (add as needed to taste), coconut sugar, maple syrup, cinnamon, ACV.

6) Slice the last fourth of the pear & oil your loaf pan.

7) Pour the mixture into the pan, then lay the pear slices across the batter. Top with a dash of cinnamon.

8) Place into the oven and let bake for 1 hour , or until toothpick can be inserted and come out clean!

9) Let cool, serve, and ENJOY!

*I like to serve mine with warmed with a little vegan butter and of course more cinnamon on top!
