Vegan Raspberry Lemonade Chilled Tarte

These are a favorite sweet go-to for me. I love sour tastes, so this is a perfect pairing of sour & sweet. I love that they look so fancy, but really they are SO easy to make!

//tip// add some blue spirulina powder or the Tropeaka Immunity powder for added color & nourishment!

Yields 8-10 Tartès

// Base Ingredients//

1 Cup Almonds

1/2 Cup Oats

1/3 Cup Avocado Oil

1/2 Cup Dried Dates

2 Tablespoons of Water

1/2 Teaspoon of Cinnamon

Salt to Taste

//Filling Ingredients//

1.5 Cups Caw Cashews

1/2 Cup Coconut Cream

1/2 Cup Honey

1/2 cup Frozen Blueberries

1/4 Cup Lemon Juice

1 Cup Frozen Raspberries

1/5 Cup Frozen Dragon Fruit*

1/4 Cup Frozen Acai*

*If you don't have these frozen fruits, replace same amount with any frozen fruit of your choice.

//Method//

1) To make the base: blend the almonds and oats in a blender or food processor. Once fully ground, add the dates and blend again.

2) Transfer to a mixing bowl, add the salt, avocado oil and water, mix with your hands.

3) Place 1.5 tbsp of the mix in the bottom of each cupcake mould. Transfer to the freezer to set.

4) Add the cashews, coconut cream, and honey to the blender, blend until smooth and creamy.

6) Add the frozen fruit and lemon juice to the blender and blend. Spoon the mixture evenly amongst the cupcake moulds and return to the freezer to set for at least an hour.

7) Set out for 10 minutes and add lemon zest on top before serving.
